Ingredients

To make this Whole Beef Brisket and Barley Stew with Root Vegetables Recipe you will need the following ingredients:
2 tablespoons olive or vegetable oil
1 boned and rolled joint beef brisket (see below)
1 large onion - chunky diced
2 - 3 cloves garlic - sliced, whole or banged
100 g / 4 oz / 2 sticks celery - chunky diced
200 g / 8 oz / 1/2 sweed - peeled and chunky diced
200 g / 8 oz / 3 - 4 carrots - peeled and chunky diced
100 g / 4 oz / 1/2 fennel - trimmed and chopped
4 sausages - twisted and cut in to 2 each
700 ml / 1 & 1/4 pints beef stock or water and a cube
1 tablespoon dark soya sauce
1/2 tablespoon Worcestershire sauce (optional)
1 teaspoon paprika
1 heaped teaspoon English mustard
100 g / 4 oz barley
2 heaped tablespoons tomato puree
Seasoning
1 tablespoon chopped parsley (optional)
Beef Brisket portion size -
Approx. 600 g / 1 & 1/4 lb. = 3 portions approx.
800 g / 1 & 1/2 lb. = 4 - 5 portions approx.
1000 g / 1 kilo / 2lb & 4 oz = 6 portions

Methods

  1. Instructions for the Whole Beef Brisket and Barley Stew with Root Vegetables Recipe:
    • Heat the oil in a large casserole dish, saucepan or stock pot.
    • Seal of the beef on all sides until brown all over.
    • Add the onion and garlic and cook to soften with the beef
    • Add the celery and stir for a few seconds
    • Add the rest of the vegetables and allow to catch the heat and cook slightly, but with out burning anything else, control the heat
    • Add the water, sauces, paprika and mustard
    • Bring to the boil
    • Cover with a lid or tinfoil. (making sure the casserole is in an ovenproof dish)
    • Place in a preheated oven gas 7-8 / 220-230*c on the middle shelf and cook for 2 hours
    • Remove from the oven turn over the brisket in the pot and add the barley, stir in well
    • Place back in the oven covered and cook for a further 30 minutes
    • Take out of the oven and stir in the puree
    • Season to taste
    • Serve
    • Carve the meat in to slices and serve with the casserole vegetable and barley gravy
