Summary:

This recipe is not an "everything relish" but it does go very well with pork or chicken. Try serving with chicken and sweet pepper wraps or on the side of some slow cooked B.B.Q pork.

Ingredients

To make this Apple and Coconut relish you will need the following ingredients:
180 g / 6 oz granulated sugar
175 ml / 6 fl oz white wine vinegar approx.
700 g / 1&1/2lb. diced apples (peeled and cored weight)
180 g / 6 oz / 1 large onion - peeled and medium diced
2 inches of grated fresh ginger
100 g / 4 oz desiccated coconut

Methods

  1. To make Apple and Coconut Relish
    • Add everything, except the coconut into a thick saucepan
    • Bring to the boil, stirring all the ingredients together
    • Then simmer for 15 - 20 minutes, stirring occasionally and making sure the mix does not dry out, burn or the apples break down too much
    • Add the coconut and cook for a further 10 minutes
    • Spoon into sterilized jars and store in a cool place for a month and once opened store in the fridge
    • Different apples will produce a different consistency, firm cooking apples will produce a chunky mix whilst softer eating apples will produce a smoother mix.
