Ingredients

To make this Roast Pork with Crispy Crackling Recipe you will need the following ingredients:
Choose a pork joint Try - Boned and rolled leg or Loin of Pork or Rib of Pork on the bone200g / 8 oz meat weight per person
Tip - if buying bone in joints allow 1/3 bone weight.
So 300g = 1 portion,100g wastage of bone and 200g raw pork = 120 - 150g cooked weight.
For the Tray -
2 carrots
1 leek
2 onions
4 cloves garlic
A hand full of fresh thyme, sage or oregano
1/4 bottle white wine
For the Rub -
1 tablespoon Colmans English mustard
1 teaspoon salt
A few twists of pepper

Methods

  1. To make this Roast Pork with Crispy Crackling Recipe:
    • Usually your butcher would of tied a leg joint for you, if not simply tie it round a few times so it holds a nice shape.
    • Rub the pork meat only with the mustard and black pepper, don,t get anything on the rind - as moisture and marinade will stop it from going crispy
    • In an oven tray add the chopped up vegetables, herbs and add the wine
    • Place the joint on top and rub the fat with the salt
    • Place in a preheated oven gas 9 / 240*c / 475*f for 20 minutes
    • Turn the oven down gas 5 / 190*c / 350*f until cooked
    • If your not quite sure test by inserting a skewer in to the middle then touch the back of your hand with it - if its hot its cooked. Plus the juices should come out clear
    • Cooking Times for Pork = 30 minutes a lb. / 450g and 30 minutes over plus rest covered with foil for 20 - 30 minutes to rest
    • Smaller joints of Loin and Rib can be cooked on a wire rack over potatoes, just toss in oil and seasoning - again just rub the fat with salt for a crispy crackling
