Summary:

A recipe for a hot chilli relish to accompany Mexican food or puree for a hot sauce or marinade for B.B.Q meats or serve a little on the side with char-grilled seafoods.

Ingredients

To make this hot Mexican chilli reilsh you will need the following ingredients:
10 whole smoked red chillies (chipotle / jalapeno) quartered
1 onion small diced
2 cloves garlic sliced or crushed roughly
5 tablespoons white wine vinegar (or cider)
4 tablespoons fresh tomato sauce or chopped tinned tomatoes
1/2 teaspoon ground cumin
1/2 tablespoon fresh oregano or 1/4 dried seasoning
1 and a 1/2 pints / 850 ml water

Methods

    • To make Adobo Sauce:
    • Place all the ingredients in a thick bottomed pan
    • Bring to the boil and then reduce to a heavy simmer
    • Cook for an hour, until the chillies are soft and the liquid has reduced by half
    • Store in a sterilized jar for a relish or
    • Process until smooth for a sauce
