Ingredients

In order to make this Thai Sweet and Sour Rice Noodle Salad you will need the following ingredients:
120g/4 oz rice noodles
50 ml pineapple juice
1 teaspoon tamarind paste
1lime juice
50 ml coconut milk
1 tablespoon red curry paste
1 teaspoon ginger- grated
1 tablespoon chopped coriander stalk and leaf
Seasoning

Methods

  1. To make the Thai Sweet and Sour Rice Noodle Salad
    • Add everything, except the noodles and coriander to a saucepan and heat gently
    • Add the noodles and stir round for a few minutes till soft
    • Add the coriander- season to taste and serve
