Ingredients

To make Coconut Cake with Lime Icing Recipe you will need the following ingredients:
40g/1 ½ oz desiccated coconut
120g/4oz plain flour sieved
6 medium eggs
150g/ 5oz sugar
1/2 zest of a lime juice of ½ lime
Icing –
125g/ 4 oz soft butter
150g /5 oz icing sugar
1 tablespoon lime zest and ½ the juice

Methods

    • To make Coconut Cake with Lime Icing Recipe
    • Sift flour and stir in the coconut- leave aside
    • Whisk the eggs over a pan of simmering water in a bowl (Bain Marie)
    • Add sugar slowly until doubled in size
    • Remove from heat
    • Add zest and juice, then fold in dry mix
    • Pour in to a greased tin
    • Put on a medium shelf in a pre heated oven
    • Bake for 35 –45 minutes. Gas 4/180c/380*f. juice
    • For the icing -Beat together all the ingredients and cover cake
    • Sprinkle with coconut (toasted coconut is nicer) Recommended cake tin- approx. size 6 inch
