1 Turkey, Tequila, Chocolate and Chilli in Foil

Serves one – make as needed
Preparation time – 5-10 minutes
Cooking time 30-40 minutes

Ingredients:

  • 1 Foil square lined with greaseproof paper filled with 1 portion of turkey
  • 1/2 measure of tequila
  • 1/4 fresh chopped chilli
  • 1/4 small sliced red onion
  • 1/6 sliced yellow pepper
  • 1 crushed garlic clove
  • 1 tablespoon olive oil and a splash of stock, water or apple juice
  • 1 – 2 squares of grated dark 70% coco chocolate and 1/4 squeezed lime.

Method:

  1. Roll the sides over like a Cornish pasty to seal and cook in a hot oven for 30 –35 minutes.
  2. Shake the bag slightly before servings to mix the chocolate scented sauce.
  3. Serve in the foil with Spiced Rice or Cajun jacket wedges and bean salsa.
  4. Vegetarian – replace the Turkey with Fish, Beans, and slice’s of field mushrooms or rings of fresh corn on the cob.

2 Chocolate Rum and Raisin Truffles

Makes approx. 16 or so
Preparation time – 20-30 minutes
Cooking time – 5-10 minutes melting time

Method:

  1. Soak 30g/ 1oz of raisins in 1/2 measure of rum leave to stand.
  2. Chop up a bar (100g) of chocolate and melt in a bain-marie.
  3. Pour on 3fl oz/75ml of boiled double cream; beat in 15 –20g of soft butter in 2 stages.
  4. Add the rum and raisin mix.
  5. Put in the fridge to set for around 20 minutes.
  6. Roll with clean damp hands in to small balls and roll in coco powder.

3 White chocolate Ice-cream with chocolate chips

Serves – 4
Preparation time – 30-40 minutes
Cooking time –10 minutes or so
Plus freezing time

Ingredients:

  • Sauce Anglaise
  • 250ml/9fl oz full fat milk
  • 250ml/9fl oz dbl cream
  • 3 x L egg yolks
  • 100g/3-1/2oz caster sugar
  • Few drops vanilla essence

Method:

  1. Bring the milk and the cream with the vanilla to the boil
  2. Whisk the eggs and sugar together
  3. Pour the milk and cream over the eggs stir and re heat gently back in to the saucepan, stir slowly on a low heat until the mix coats the back of a wooden spoon.
  4. Pour in to a container and cool completely
  5. Add 75g/3oz melted white chocolate and a hand full of chocolate chips.
  6. Put in to an ice-cream maker and follow the instructions.
  7. If you haven’t got an ice-cream maker put in to a freezer proof container and freeze, stir every 30 minutes until soft and ice-cream like.

Variations are endless; all you need is a sauce Anglaise as a base and just add the flavour.

4 Hot Chocolate with Marshmallows

Serves 2
Preparation time –5-10 minutes
Cooking time –10 minutes

Method:

  1. Add 1 bar/100g dark grated or finely chopped chocolate to 1 pint of double or whipping cream (or 1/2 cream to 1/2 milk) plus either a vanilla pod or a few drops of vanilla extract.
  2. Cook on a low heat in a saucepan until all the chocolate has melted bring to the boil and pour in to 2 mugs float 2 or 3 marshmallows on top and if you wanna go to town spoon some whipped cream on top with a sprinkle of grated chocolate. (If the mix is to thick add more milk to get the consistency you want)
  3. Also makes a great chocolate sauce when thick (hot or cold).
  4. Good with a little alcohol in i.e. Rum, Brandy

5 Chocolate Fondue – with dipping fruits and sweet things

Method:

  1. In the same way as you make hot choc – Melt pure chocolate and double cream together. (100g – 2/3 pint) Add a dash of milk if it’s too thick.
  2. Serve in a mini fondue, bowl or ramekin hot.
  3. Surround it with dipping things, fruits cut in to bite sized pieces, marshmallows, Amoretti biscuits, sponge fingers, mini shortbreads, mini pastries, truffles, etc etc (Suggested fruits – strawberry’s, raspberries kiwis, mango, pawpaw, apple, bananas, grapes, melon –basically anything)

6 Chocolate, chilli and vanilla pod bread

Makes – one large loaf
Preparation time – 30 minutes
Cooking time – 40 minutes
Resting time

Ingredients

  • 1-1/2 lb/700g Bread making flour (or plain)
  • 1/2 tsp salt –few twists of pepper
  • 1oz/30g/2 tablespoons olive oil
  • 1 tsp honey
  • 1 x sachet of yeast (6-7g)

Method:

  1. Mix all together with 1/2 pint of warm water, knead for 10 minutes
  2. Leave to rise in a hot place till risen by double
  3. Knock down and knead again for a minute
  4. Add 1 chopped up fresh chilli, 1/3 bar/35g chopped dark chocolate and the seeds from 1 vanilla pod.
  5. Mould in to a loaf shape with the remainder of the vanilla pod hidden in the middle and place on a greased tray.
  6. Leave to rise again.
  7. Egg wash and then bake in a preheated oven gas 7/220*c for 35-40 minutes
  8. Or until the bottom sounds hollow when tapped.

7 Dark chocolate wholemeal cookie melts

Makes 8 biscuits
Preparation time –15-20 minutes
Cooking time – 12-15 minutes

Ingredients:

  • 50g/2oz soft butter
  • 50g/2oz caster sugar
  • 1 x small egg (or 1/2 large)
  • 100g/4oz wholemeal S.R. flour –sieved/keep bits
  • 1/2 teaspoon vanilla (op)
  • 1 tablespoon milk
  • 75g/3oz dark chop chips or chopped dark chocolate

Method:

  1. Cream together the butter and sugar, till smooth and light
  2. Add the eggs gradually, beating well
  3. Add the flour, vanilla and milk and mix in gently
  4. Add 1/2 the chocolate chips to the mix
  5. Roll on to a floured surface
  6. Cut in to rounds
  7. Push the other 1/2 of the chocolate chips in to the top of each cookie
  8. Bake in a preheated oven gas 4/180c for 12 –15 minutes.

Variations – Flavour your cookies with any number of things like dried fruits, nuts, muesli, white chocolate, fudge pieces, chopped toffees, fresh berries or even raisins soaked in liquor.

8 Chocolate and Guinness Cake

Makes one medium cake, serving 8-10 slices
Preparation time – 20-30 minutes
Cooking time – 1 –1 &1/4 hours
1x deep medium tin approx 7-8

Ingredients:

  • 150g/6oz butter -soften
  • 225g/9oz soft brown sugar
  • 3 x eggs
  • 150g/6oz Plain Flour
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Bicarbonate of Soda
  • 320ml/10fl oz Guinness (small tin)
  • 75g/3 oz coco powder
  • 75g/3oz dark chopped chocolate

Method

  1. Beat the butter and sugar together until creamy and smooth
  2. Beat in the eggs slowly and mix well
  3. Mix in flour, B.P and bicarb till just mixed
  4. Meanwhile whisk together the Guinness and coco
  5. Add the Guinness mix to the cake, beating well till mixed in
  6. Mix in the chopped chocolate
  7. Spoon in to a grease tin
  8. Bake in a preheated oven Gas 4/180c for 1 – 1-1/4 hours or until a skewer or knife come out of the middle clean

9 Easy Peasy chocolate sauce

Make as much or as little as required
Preparation time – 5 minutes
Cooking time – 10 minutes

Ingredients:

  • Simple 3.2.1. =
    3 parts water
    2 parts sugar
    1 part coco powder

Method:

  1. Bring to the boil, simmer for 5 minutes, whisk and serve.
  2. Optional extras - a hand full of grated chocolate, vanilla or alcohol to taste, or half cream and milk in-stead of water
  3. Serve hot, warm or cold

10 Sticky hot Chocolate Pudding

Serves - 6
Preparation time – 15-20 minutes
Cooking time – 40 minutes

Ingredients

  • 160g/6oz Plain Flour
  • 60g/2oz coco powder
  • 150g/6oz soft brown sugar
  • 90g/3oz chopped dark chocolate
  • 200ml/ 1/3 pint any milk
  • 1 teaspoon vanilla
  • 50g/2oz melted butter
  • 1 large/ medium whole egg
  • 160g/6oz dark brown sugar
  • 120g/4oz coco
  • 500ml/ just under a pint of boiled water

Method:

  1. Mix together the flour, coco, chopped chocolate and sugar
  2. Meanwhile beat together the milk, egg, vanilla and melted butter
  3. Then add to the dry mix
  4. Pour in to a heatproof greased serving dish
  5. Mix the coco and sugar together and sprinkle on top
  6. Pour on the water on top
  7. Cook in a preheated oven gas 6/200*c for 40 minutes

The water will bake through the chocolate pudding making it smooth and rich while making its own chocolaty sauce on the bottom. So all you need to serve with this pudding is some pouring cream and a chocolate desire.
