Courgette, Feta and Sweetcorn Cake Recipe
This Courgette, Feta and Sweetcorn Cake Recipe is a variation on a Turkish recipe. Serve with a yogurt dip like Cakic or even a sweet chilli sauce. Don’t add any salt as the feta contains enough salt for this recipe.
Preparation time: 30 minutes Quantity: Serves 4 Cooking time: 10-15 minutes
Ingredients
To make this Courgette, Feta and Sweetcorn Cake Recipe you need
2 large courgettes -grated
1/2 teaspoon salt
60g/ 2 oz breadcrumbs
1/2 onion - grated
2 tablespoon sweetcorn
1 egg - large
60g/ 2 oz feta -crumbled
few twists black pepper
To coat and cook -
2 tablespoon plain flour
60g/ 2 oz breadcrumbs
2 tablespoons olive oil
Method
- To make this Courgette, Feta and Sweetcorn Cake Recipe
- Mix the courgettes with the salt and leave aside for 20 minutes
- Rinse through and then squeeze out any
- Mix with everything else
- With damp hands, mould in to 8 small cakes or 4 larger ones
- To coat mix the flour with enough water to mix in to a batter the consistency of single cream
- Coat the cakes in the batter, shake of any excess
- Dip in to the breadcrumbs until well coated
- Fry in hot oil until golden on both sides
