Spinach with Garlic
Spinach reduces down to next to nothing - so one huge bag will only feed a few. But fresh spinach is one of my favourite side dishes.
Preparation time: 5 minutes Quantity: Serves 4 Cooking time: 10-12 minutes
Ingredients
50g/ 2 oz butter
2 cloves crushed garlic
1/6 fresh grated nutmeg
2 teaspoons water or dry wine
1kg/ 2 lb fresh spinach
Method
- In a large pan, heat the butter gently till melted
- Add the garlic- cooking very gently to infuse the garlic
- Add 2 teaspoons water/dry wine
- Add a handful of spinach, letting it reduce down a little, before adding another- till all spinach is wilted
- Grate on the fresh nutmeg and serve
