Oat and Currant Cookies
These rustic little beauties are perfect for the little ones to get stuck in too - easy to make as long as the butters soft and no rolling required. Who’ll get the bowl to lick!
Preparation time: These rustic little beauties are perfect for the little ones to get stuck in too - easy to make as long as the butters soft and no rolling required. Quantity: approx. 10 biscuits Cooking time: 10 minutes
Ingredients
50 g butter - softened
125 g light brown sugar
1 egg - (any size)
1/2 teaspoon vanilla essence
60 g self raising flour
175 g oats
75 g currants milk to bind
Method
- Preheat the oven gas 5 / 190*c
- Cream the butter and sugar together
- Beat in the egg
- Add the rest of the ingredients and enough milk to form a sticky spoonable mix
- Drop spoonfuls on to a greased tray
- Bake for 9 - 10 minutes until lightly browned
