Indonesian Fried Squid

I love this dish as a starter with sweet Chilli sauce and a few mixed leaves dressed with lime and crushed peanuts with beanshoots or served as part of an Indonesian feast.

Preparation time: 10 minutes + marinating time Quantity: Serves 4 portions Cooking time: 4 - 6 minutes

Ingredients

450g / 16 oz medium/baby sized squid

150g/ 5 oz tapioca flour or use plain flour

3 cloves crushed garlic

1 tablespoon black pepper corns

1 tablespoon light soy sauce oil for cooking

Method

  • Wash, trim and cut the Squid in to big rings
  • Grind the garlic and pepper
  • Add the soy
  • Mix with the Squid to marinate, leave for minimum 20 minutes
  • Heat up the oil in a wok or deep fat frier
  • Toss the squid in the flour
  • Deep fry till golden brown on both sides
  • Pat dry and serve
