George, Diane & Zena would like to wish all our members a very Happy Christmas and New Year. This festive time of year seems to have arrived sooner than last year! So this year I plan to be thoroughly organized with my meal planning and I will be looking thorough Zena’s recipes for some scrumptious Christmas delights.

Here is a recipe for all that leftover turkey meat
Minced Turkey or Chicken Patties
A good recipe to use up cooked chicken or in fact turkey or pork. Serve as part of a buffet, a starter or serve several as a main course with a salad and a sour cream and dill dip.
Preparation time: 20 - 30 minutes Quantity: Makes 12 - 16 patties Cooking time: 30 minutes
Ingredients
4 slices stale white bread
1/4 pint / 120 ml any milk
450g / 1 lb. minced turkey or chicken - cooked
60g / 2 oz butter - softened
1 small egg
1 clove crushed garlic
1 tablespoon chopped dill (optional)
3 tablespoons plain flour water to mix
120g / 4 oz breadcrumbs
Method
- Soak the bread in the milk for 20 - 30 minutes
- Squeeze out the excess milk
- Mix the bread with the chicken, butter, egg, garlic and dill
- Mix well, till all incorporated
- Mould with damp hands in to small patties, the size of small plums
- Meanwhile make the breadcrumb mix by - whisking the flour with enough water to mix to a batter the consistency of double cream
- Place the crumbs in another bowl
- Dip the patties in to the batter mix, shake of any excess
- Then dip in to the crumbs, until well coated
- Bake on a greased tray in a preheated oven, middle shelf - gas 5- 6 / 180*c -200*c for 20 -30 minutes
